A farm distillery at the Harz Fallstein producing award-winning spirits: CARLS whisky, THEOS grain schnapps, TOMMYS gin and LUCAS vodka — from their own grain and Harz water.

The estate is run by the Demmel family, with Thomas Demmel as managing director. The distilling tradition goes back to their ancestor Carl Polland, whose portrait appears on the whisky label; gin, grain schnapps and vodka carry the names of the family's youngest generation.
CARLS Single Malt and Superior Vintage whisky, THEOS Korn Premium and Barrique, and the TOMMYS gin range with Dry, Craft, Barille, Barrique and Limone — repeatedly awarded, among others the Kulinarischer Stern in 2019 and 2021.
Farm and distillery sit in Rohrsheim near Osterwieck in the Harz Fallstein region. The area offers good conditions for grain and fruit, and the Harz supplies the water. The estate also holds a guest house and a museum of regional farming history.
