The people

Generations of winemaking tradition

Herbert and Irene Pawis laid the foundation for the estate back in 1961 with a vineyard on Freyburg’s Edelacker, officially establishing an independent winery in 1991. Bernard and Kerstin Pawis later took the helm. Since 2023, their sons have joined full-time: Christian with a degree in viticulture, and Marcus as an event technician. Together, the family runs the Saale-Unstrut winery with a steady eye on continuous development.

The product

Diverse grape varieties and sustainable cellar work

The portfolio features around 30 wines made from 15 grape varieties, including Riesling, Pinot Blanc (Weißburgunder), Pinot Gris (Grauburgunder), and Bacchus. It is complemented by traditional-method sparkling wines, fine spirits, and grape juice. The cellar relies on pneumatic presses, chilled stainless steel tanks, and oak barriques. Holding FairChoice certification, the estate commits to independently verified, sustainable viticulture.

The place

Historic estate in Freyburg-Zscheiplitz

Following early beginnings in the Freyburger Ehrauberge and a winery in town, the estate relocated to a former manor house in Zscheiplitz in 2007. The property brings together a two-storey cellar, a tasting room in the restored stables, a seasonal wine tavern (Straußwirtschaft), and holiday apartments in the Brunnenhaus. The vineyards span steep slopes and traditional terraces across the Saale-Unstrut region, including Schweigenberg and Zscheiplitzer Himmelreich.
